Happy Fats Cookie Dough Balls

These are sooooo good!!

½ cup macadamias

½ cup cashews

½ cup almond flour

½ cup medjool dates (see tip)

1 Happy Fats pouch

1 tablespoon melted coconut oil

½ teaspoon vanilla extract or vanilla bean powder

Pinch of salt

Optional:

2 Tablespoons of dark choc chips

 

In a food processor, combine macadamias, cashes and almond flour – pulse until combine. Then add all remaining ingredients pulse until combine. If using choc chips stir in. Grab roughly a tablespoon of dough and roll between your hands to create a ball. Chill the balls in the freezer for about 30mins then keep in the fridge

 

Tip: These cookie balls are best made with fresh dates that are very soft. If you have dry and firm dates soak them in boiling water first.
