Creamy, Dreamy Coconut Butter
Ok so here I go again raving about growing up in a tropical place, but I’m telling ya…….you ain’t lived if you haven’t drank the water straight from the coconut and then devoured the flesh on the inside!
Fast forward to current day there are not so many fresh coconuts around here (Canada) ……..enter Coconut Butter. The closest thing to that fresh coconut flesh, yep its literally ground up coconut flesh into a creamy, dreamy butter. Not to be confused with coconut oil, which is the actual oil from the coconut, this is the meaty part. My relationship with this creamy goodness is a newer one, I cannot believe I didn’t find it sooner, I am devoted for life. Coconut is like a gift that just keeps on giving, here are some of the benefits:
- It’s rich in lauric acid, which boosts immunity and destroys harmful bacteria, viruses, and funguses.
- It actually boosts your metabolism, which aids in weight loss and increases energy levels.
- It’s packed with healthy fats, so you feel full longer.
- It’s full of essential amino acids, calcium, and magnesium.
One of my favourites (other than straight from the jar) is using coconut butter in elixirs which enrich an already elevated bevy. You can also add it to pretty much any recipe to replace dairy or melt and pour over berries.
If you are looking for the most decadent coconut butter in Calgary head to The Light Cellar in Bowness, where they stone grind their own for 7 days…………nuts! The end result is mind blowing.
